See this sad little piece of meatloaf?
I really did plan on taking a picture of the process and the final product.
I forgot during the process.
And my family devoured it before I could get a picture of it fresh from the oven.
It really was fantastic…
Much better than this little end piece looks.
If the way to your families heart is through their stomachs, they LOVE me and this meatloaf!
Here’s the recipe…
Recipe by: my sister-in-law Jody
2 Eggs, slightly beaten
3/4 c. soft Bread Crumbs (1 slice)
1/2 c. Tomato Juice
2 Tbsp. snipped Parsley
1/2 tsp. dried Oregano – crushed
1/4 tsp. Salt
1/4 tsp. Pepper
1 small clove Garlic – minced (I used two)
2 lbs. Ground Beef
6 1 oz. slice fully cooked Ham (like Buddig’s)
1 3/4 c. shredded Mozzarella Cheese
In a large bowl, combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic. Stir in the ground beef, mixing well.
On foil, pat meat mixture to a 12×10 inch rectangle. Arrange ham slices atop meat, leaving a 3/4″ border around all edges. Sprinkle 1 1/2 c. cheese over ham.
Starting from a short end, carefully roll up meat, using foil to lift; seal edges and ends. Place roll, seam side down, in a 13x9x2 inch baking pan.
Bake in a 350 degree oven for 1 hour and 15 minutes or until temperature registers 170 degrees and juices run clear. (Center of meat roll will be pink due to the ham.)
Sprinkle remaining shredded mozzarella over top of roll; return to oven for 5 minutes or until cheese melts.
Makes 8-10 servings. (With this I disagree…3 of us ate all but this little piece!)
I did serve this with green beans topped with parmesan cheese.
There were none left to show you.
Nor were there any rolls left…
But that’s a good thing, right?
