A Tasty Science Experiment aka Pineapple-Angel Food Cake

Holy Yum.

Barbara passed this “secret” recipe (that she got off of Pinterest) with us yesterday.

Seriously the easiest and best dessert EVER.

Gabi graciously made it for us last night.

Here you go:

1 Angel Food Cake Mix (the one step kind not the two step)

1 20 oz. can of Crushed Pineapple

Mix in a large bowl as it will look like it’s blowing up…it’s like a GREAT science experiment!

Let it settle a little. Β Pour into a greased 9×13 pan and bake for 30 minutes at 350 degrees.

Easy peasy.

Serve with a dollup of Cool Whip on the top!

Yes, this is the picture of my piece tonight…

And yes, there is a bite out of it! πŸ™‚

Have a great day!

Holy Hanna-andy What a Day!

You know the joke about skidding into death saying “Wow – what a ride!”?

I feel like that is appropriate for today.

And no…I don’t know where the saying ‘holy hanna-andy’ came from…

It’s just one of those saying that pops into my mind from time to time.

No rhyme nor reason…

ANYWAYYYYYY…..

It was just one of those days –

Woke up with a tension headache.

Quick coffee, breakfast treat, shower and on the road again…

4 hour round trip, dr’s appt, quick Menard’s stop and back in town just in time (ok a few minutes late) for our Young Life committee meeting.

2 hours later I get home to a daughter that wants to go to a sleepover (oops, my honey forgot we were getting family pictures taken in the morning)…needless to say the 12 year old was thrilled with having to change her plans.

A friend then stopped by to purchase one of our old bikes…

A LOVELY dinner made by my honey (God I love that man)…

Another friend stopped by to purchase the girls old Gameboy for her grandson.

And at last, here I am.

Visiting with you, sharing my story, with chocolate covered almonds and a glass of wine….

Aaaaahhhhhhh….

Much better.

Oh and in the background…the show Castle on TV.

And I’m on my newly cleaned (from baby urp) couch.

Thanking God that this day is just about done and bedtime will be here soon.

The babies are back tomorrow…and there’ll be pictures…and there’ll be fun…

And hopefully there won’t be any baby urp!

I hope your day was a little less hectic – feel free to tell me about your day in the comments section! Β I’d love to have an actual conversation with you!

That’s all for now friends,

I’ll meet up with you again tomorrow.

I Lost My Funny Bone

Nooooooooo!!!

I thought I lost my funny bone!Β  Really!

And then Saturday night with the family happened…

Remember that card gameΒ  – Spicy Uno – I told you about in my last post? Read more

A Weekend of Blessings…

What a fun weekend it has been!

My oldest daughter and her boyfriend came for a visit, picking up my middle daughter along the way – so our household was once again full!

Tim taught Alex how to make Potica on Saturday…I peeked in at the process off and on, smiling at how cute these two are together – what a special moment they’ll remember for a lifetime.

Tim has been baking Potica for our Young Life Sweet Spring Auction for the past few years. He donates 10 loaves which sell for $35 each – what a wonderful talent to share! …And they go quickly – he’s known for his fantastic Potica’s. It’s his Grandma Mary’s recipe which he tweeked a little! πŸ™‚

And while they were making Potica…I took Tom (Alex’s boyfriend) shopping for a Mother’s Day present for his Mom. Of course, he helped me pick out a high school graduation present for his sister at the same time, so we covered all our bases and had a nice time together!

We had Tim’s parents and Grandma Shepel over for dinner that evening…and get this…Alex and Tom made dinner! A scrumptious breaded pork cutlet meal with an Eggplant Casserole…YUMMMMMY!

We finished off our Saturday with a round of Spicy Uno – thanks to Samantha for teaching us the rules…however, Tim and I decided we may be too old for this game!

This morning Tim made everyone French Toast and Bacon and then loaded up Tom and Alex’s truck (ok his parents truck…) with two Adirondack Chairs. Yes, those are the chairs you see the two of them sitting in (their Christmas present). Beautiful aren’t they? Tim built them! (This picture was taken at Christmas…most of our snow is gone now…Yayyyy Spring!)

And then they drove off…

Tom, Alex and Sam…

Back to work and back to school.

(sigh)

And it was back to just Tim, Gabi and I.

(sigh)

The house is quiet again.

(sigh)

Until next time…

(sigh)

But for now, I’m one happy and thankful Mom…

The Great Swiss Cake Roll Heist

I purchased a box of Swiss Cake Rolls as a treat for my family last week (Friday).

I informed my youngest that we were only going to have one a day…

Yes, we had to make that clear to her (and myself).

We do love our sweets around here! Read more
